Eat More Pink Cupcakes

I’ll admit it, I love cake. I know a lot of people think it is too dry but, that is easily compensated for by lavishing on a little more icing! No, cake, in my humble opinion, is one of the single most important inventions of humankind! It is right up there with the wheel, only it is better than the wheel, because you can eat it!

The experts say cake evolved from breads. The ancient Greeks made cheesecake from goats mild, and, the Romans fortified bread with milk, eggs, and honey. We still have some of these cross-over bread-cakes today, like Banana Nut bread, and Sponge cake. And, up until the depression, cakes were still made from scratch. Then, in the 1930s, a manufacturer put a fortified bread-cake mix in a box, to help feed millions of economically depressed people. They added flavorings, boxed icings, and cake-mix-in-a-box was born!
